November saw the re-launch of the Grand Hôtel de Bordeaux & Spa’s 19th century Belle Epoque-style Brasserie under its original name, ‘The Bordeaux’. Originally opened in 1850 in the Place de la Comédie square at the heart of the city, today it is the only restaurant that remains from ‘old Bordeaux’.

Overseen by Executive Chef Pascal Nibaudeau, Chef Olivier Garnier will craft a menu for this Belle Epoque-style brasserie that will feature only the most traditional of French dishes and wholesome local delicacies.

Big cuts of meat such as wild boar and suckling pig can be served on request and a contemporary twist on wines by the glass, leading Bordeaux grand crus will be served from magnums and double-magnums, an opulent reminder of 19th century The Bordeaux.

Grand Hôtel de Bordeaux & Spa is also delighted to announce the appointment of David Lestelle as Spa Manager, overseeing and managing a team of 11 staff at the recently opened NUXE Spa Les Bains de Léa.

The Bordelais Spa Manager joins Grand Hôtel de Bordeaux & Spa from Hôtel Majestic in Cannes. With 17 years of experience in the industry, David Lestelle has previously managed luxury hotel spas on the French Riviera including Hôtel du Cap Eden Roc, Château Saint-Martin & Spa and the Hôtel de Paris in Monaco. He will bring this high level of experience to his work at Les Bains de Léa spa.

Commenting on his appointment at Grand Hôtel de Bordeaux & Spa; “I am particularly excited to be returning to Bordeaux to join the team at Grand Hôtel de Bordeaux & Spa. My aim is to bring my own touch and experience to NUXE spa Les Bains de Léa and lead the team towards continuing to provide guests with the highest quality wellbeing and treatment experiences.”
