    Swissôtel Krasnye Holmy is pleased to announce the opening of a new restaurant. Located on the 2nd floor of the hotel, the Acapella Restaurant & Lounge has rediscovered genuine taste, specialising in fresh, healthy and delicious food. It also offers a variety of local wines, as well as drinks made using organic fruits and vegetables. The restaurant’s main emphasis is on locally sourced, organic ingredients, while maintaining affordable dining. “A capella” is a musical term for polyphonic choral singing without instrumental accompaniment. Vocalists need to have a great deal of experience and knowledge of music to be part of an a capella choir. The kitchen team works together in a similar way, harmonising to offer guests natural and exquisite tastes that aren’t suppressed by heavy spices and sauces. The menu for the Acapella Restaurant & Lounge was created by Ivan Tishkin, Chef de Cuisine, who was previously the chef of the panoramic City Space Bar. The beverage menu was fashioned by Elena Chernoguzova, Swissôtel Krasnye Holmy’s beverage manager.

    Acapella’s dishes contain only natural products and ingredients selected for their high level of quality. The restaurant’s team offers a modern interpretation of European and Russian cuisine, focusing on products with Russian origin, as well as eco-friendly, organic ingredients combined using modern cooking techniques. About 70% of all products used are local. “We use a lot of Russian products and recipes, and we offer them in a novel way. For example, some dishes are prepared sous vide, at low temperatures in a vacuum. This technique helps to keep the maximum of minerals and nutrients in food. Meat becomes softer and juicier, and fish has denser texture and richer taste,” says Ivan Tishkin.

    This concept is also reflected in the Acapella Restaurant & Lounge’s interior design. In the same way a choir has different voices, the design of the restaurant is a delightful combination of tones and sections.Acapella opens onto a lounge overlooking the lobby, with an elegant à-la carte restaurant in the back. Acapella offers a relaxed, stylish atmosphere that combines Russian sophistication with a modern, urban tone. With seating for 150, the Acapella Restaurant & Lounge is open daily from 7 am to 11pm for breakfast, lunch or dinner. It is also an ideal place for business or social events.
